Each month we team up with one of the best brewery in the region to feature their selection of beers to pair with our carefully crafted menu of smoked meat. The brewer themselves will be joining in to talk about their story and their beer. We’ll chime in to discuss which beer pairs well with which food and look to dispel some myths about food and drink pairings.  For any beer and/or barbecue enthusiasts, we want to hear your thoughts too. And, of course, we will drink and eat lots of beer and barbecue.

This month we will be pairing our meat with Thornbridge Brewery on Wednesday 30th March, 7-9pm.


Starter: Smoked Salmon Paté paired with Rhubarbe de Saison (ABV 5.0%)

Mains: Pork Spare Ribs, Beef Brisket, Texas Hot Link paired with Chiron (ABV 5.0%), Kill Your Darlings (ABV 5.0%), Bayern (ABV 5.0%)

Dessert: Belgian Chocolate Brownie with White Chocolate Ganache paired with Imperial Raspberry Stout (ABV 10%)

When we first conceptualized opening The BBQ Collective at The Hop, I dreamt of filling my days planning, creating and consuming the two things that motivated me: world class BBQ and luscious beer.  I imagined dividing my time between visiting breweries – where I was creating specialty beers to match our food, and chopping my own wood, butchering hogs and steer, grinding sausages, manning the smoker and generally swilling racks of different beers every day.

As it turns out, our weeks are not quite that romantic. But we do have the luxury of being surrounded by great breweries and farms, so we could not be happier to launch our monthly “BBQ and Brewers Night” series.  Why? Because nothing beats a damn good pint of beer and a platter of smoked barbecue meat.

Thornbridge beers were first brewed in early 2005 after the establishment of a 10 barrel brewery in the grounds of Thornbridge Hall. The initial focus was on a range of cask beers that used traditional recipes but provided a modern twist through the use of a wide range of hops, malts and the innovation and passion of the brewing team. After winning a succession of awards (now over 350 national and international awards) a new, state of the art, brewery and bottling line was opened at Bakewell in September 2009 to meet with demand and increase the range of beers.

From moving into this new brewery Thornbridge were able to expand their sales worldwide becoming present in over 35 different countries. This called for further expansion which occurred in 2015 and allowed for production to increase by a third.

We’re very excited to be working alongside The BBQ Collective, known for their hugely tasty barbeque, for an evening of bbq and beer pairing at The BBQ Collective at The Hop!
