It is with mixed emotions to announce that the BBQ Collective’s residency at The Hop Sheffield will come to an end on Friday 23rd December. Our residency was fixed-term and though we knew this day was coming, it crept up on us quickly during a very busy time of year, hence our announcement today.

We want to thank all of our loyal customers who have given us such amazing support throughout this journey.

We are particularly thankful for the collaboration opportunities we had for our monthly BBQ & Brewers Night series with some of the best independent local breweries namely Abbeydale Brewery, Thornbridge Brewery, Lost Industry Brewing, Exit 33 Brewing, and North Union Brewing Co as well as beer specialist Jules Gray of the Hop Hideout.

On Thursday 24th November, we hosted our second annual Thanksgiving Feast at The Hop Sheffield and packed the house with American expats alongside their British partners and friends. There were a couple lone groups we teasingly referred to as the "curious Brits" that joined in on the fun to find out what this fuss about "giving thanks" and all things turkey was all about.

Luckily we were fortunate to have Dr Andrew Heath, University of Sheffield Lecturer in American History, accept our invitation to give a brief talk about Thanksgiving.

BBQ Collective had a pop-up stall at two events in October: the 42nd Sheffield Beer and Cider Festival (Kelham Island Museum, 19th-22nd Oct); and Magic Rock Brewery (28-29 Oct).

Here's what we served at our pop-up stall ...

Brewers Night with Hop Hideout

Once again, we find ourselves searching for the next great beer and BBQ pairing. Not that there is any shortage of amazing breweries within a 20 mile radius of Sheffield city centre, but these things are not as easy as they sound.  In the little spare time we have, we search high and low for the right partner who brings a like-minded spirit to our events.  So it was perhaps fate (or destiny) that Jules of the Hop Hideout was present at our last pairing event with North Union Brewing Company, and we quickly took a shine to one another.  We knew we wanted to do an event with Jules but couldn’t believe our luck that it would happen on this very instalment of our Brewers Night series.

We're back at Thornbridge Brewery this coming Saturday 24 September from 12pm-5pm for its Saturday Social at their Riverside Brewery, Buxton Road, Bakewell DE45 1GS. Once a month on Saturday, the lovely folks at Thornbridge hosts an afternoon of beer, music and street food social.

At this Saturday Social, we’ll be serving our autumn classic - our Texas chilli! With this weather, you're gonna want something to keep you warm and goes amazingly well with Thornbridge's amazing array of tasty beers.

Well, that was fun, now wasn't it!  The fifth instalment of our BBQ and Brewers Night series with North Union Brewing Co was by far our most adventurous to date.  Iain Kenny, Director and Head Brewer at North Union Brewing Co, was an excellent partner in this event as he certainly brought his creative best – his beers were a massive hit and we are pretty certain we did a bang-up job matching the right foods with the right beers.

You can never go wrong when a summer party includes a wheelbarrow filled with ice and a keg of Imperial Pale Lager and ends with a tense match of Beer Pong!!

Brewers Night with Exit 33 Brewing Recap

It’s never easy writing a recap of our BBQ and Brewers Dinners without being too reflective or self-critical. Did we accomplish what we set out to achieve?  Did the food pair well enough with the beers?  Did the food stand up well enough on its own? OMG, WHAT HAVE WE DONE????

This event with Exit 33 Brewing really was a big challenge for us as we stepped away from our comfort zone by developing a bespoke 5-course pairing menu (see below) that we thought would best match the beautiful beers that Pete Roberts produces.  We dabbled in things like smoked and dried baby roma tomatoes, devilled eggs, smoked rainbow trout and pickled watermelon…all in the first course!  And we finished with a chilli pineapple carpaccio with smoked banana ice cream.  From where I was standing (in the kitchen, naturally) I saw a lot of smiling faces, heard some very nice feedback, and few full bellies being rubbed.  Me thinks we done good.

Each month we team up with one of the best brewery in the region to feature their selection of beers to pair with our carefully crafted menu of smoked meat.  The brewer themselves will be joining in to talk about their story and their beer.  Our Pitmaster Jeffrey Wright will chime in to discuss which beer pairs well with which food and look to dispel some myths about food and drink pairings.  For any beer and/or barbecue enthusiasts, we want to hear your thoughts too. And, of course, we will drink and eat lots of beer and barbecue.

Brewers Night Recap: Abbeydale and Thornbridge Brewery

In our last post we shared how excited we were to launch our BBQ and Brewers Night Series – a fun opportunity to showcase not only our authentic American BBQ but also just how well it can pair with the dizzying selection of fantastic beers being brewed in and around Sheffield. We thought, heck, this should be pretty simple – visit a brewery, sample a bunch of beers and find five to match with our favourite smoked meats.  Job done.  Uh, no, the process was nowhere near that simple.  The arduous process of tasting and re-tasting was so iterative we were unsure if a repertoire the size of Abbeydale or Thornbridge Brewery was vast enough to match the dishes we thought we wanted to serve.  Yeah, I know how ridiculous that sounds.

As a chef, there are so many exciting elements in a process like this.  We first look to find flavours in beers that enhance, balance and flatter the flavours that we know in our food.  Then, unexpectedly, we taste something that just grabs us - WTF was that?  Can we do something with this? Should we?  Hell yeah, we have to! And that really changed the game for us – forcing us to push our own boundaries and create bespoke dishes to match these amazing finds.

And, of course, we will drink and eat lots of beer and barbecue.

This month we will be pairing our meat with Thornbridge Brewery on Wednesday 30th March, 7-9pm.

Starter: Smoked Salmon Paté paired with Rhubarbe de Saison (ABV 5.0%)

Mains: Pork Spare Ribs, Beef Brisket, Texas Hot Link paired with Chiron (ABV 5.0%), Kill Your Darlings (ABV 5.0%), Bayern (ABV 5.0%)

Dessert: Belgian Chocolate Brownie with White Chocolate Ganache paired with Imperial Raspberry Stout (ABV 10%)

Because your loyalty counts, we are delighted to introduce the BBQUID loyalty card to you meat lovers. How did this come about? It all started with us working out an amicable fee with our contractor Mark Thompson Flooring Solutions, who worked on our refurb back in July.

Mark LOVES his meat. Especially all things smoked and barbecue. So he was more than accomodating when it came to working out a friendly price in exchange for ... "perhaps a rack of ribs or two or more, Mark?"

The rest is history.
