The BBQ Collective brings American BBQ to The Fox Inn, York
After two years of collaboration discussions with our good mate Jamie Lawson of Ossett Brewerywe finally decided on doing our first event at one of Ossett Brewery's properties, The Fox Inn on Holgate Road on Saturday 30 August. We could not have chosen a better date or location.  

The Fox Inn, a Grade II listed pub in York which recently underwent a massive renovation, was the perfect setting for our first foray into the Yorkshire region. The Fox Inn is a stunning pub with the largest beer garden in York and is all lead by Giles Seddon and his cracking staff!

As you probably know by now, we don’t always keep to the American BBQ formula and Saturday was no exception. We served up some traditional pork spare ribs but left quite a bit of the belly meat on for an extra thick rib. The BBQ sauce was pretty straight up but we added lots of citrus juice and four different mild chilies. The BBQ Buffalo wings are a bit of a riff on Buffalo wings but we cut the sauce with some of our BBQ sauce to keep with the theme.

It was the smoked Thai pork brisket however that got us really excited. Served with wifey’s famous Thai dipping sauce (nam jim jaew), it was a knockout dish that married well with our already popular Thai Slaw.  And, of course, our garlic/chili/lemon pickles are always a crowd pleaser.

All in all, a fantastic day in York. The weather was perfect, amazing live music provided by the incredibly talented York-based bluesman Gypsy Bill Williams, and the friendliest staff in Yorkshire provided for our best UK outing to date. And the four double-shots of Jagermeister didn’t hurt either!
