If you haven’t noticed, these blogs are getting shorter. Not because we are losing steam (or interest) but because we are learning more along the way. And what we are learning is that there are come clear patterns emerging. Some are good and some are bad. Regardless, we are beginning to predict the answers to our questions and thus much more focused on the task at hand – trying new dishes and understanding the specifics of how, and of what, the classics are made.

Jack Stack was recommended up and down the friend and Internet sphere so we were pretty excited. The Freight House branch is a lovely renovated warehouse packed to the gills with Kansas City’s finest. Optimism was high.

And, for the most part, Jack Stack delivered. The beef short rib was expertly cooked, very tender, moist and a nice smoke flavor. Their pork ribs were not as great. Not very smoky, not very large in size but decent. The primary problem with both ribs was that both were completely devoid of any seasoning before hitting the smoker. No noticeable rubs, not even any salt and pepper. Completely bland. Their sauces were nice and matched pretty well with the meat but nothing special and no seasoning to pair with.

I have to think that this was not intentional as any good cook and chef knows: you must season your food.  This is Cooking School 101 and a textbook schoolboy error (yes, that was three educational references in one statement).

Wifey had some very good prawns and all of the sides were very nice and the space is exceptional, but the meat was really disappointing. Had that meat been properly seasoned, this could have been one of the top meals of the tour. But it was somewhere, sadly, in the middle.
